Sow seeds thinly in pre-watered shallow rows, and cover with a little soil. Allow about 30cm between rows. Keep soil moist until seedlings are established. As seedlings develop, thin them to about 10cm apart.

Water periodically in warm, dry spells. Roots can be left in the ground until required. The flavour improves with frost, although the tops may need some protection (with fleece or straw). Lift carefully, with the aid of a fork, to avoid breaking the roots. In very cold or wet conditions, the roots may be lifted in autumn and stored cool in sand or sawdust. Cook by steaming, then peel them. They can be enjoyed whole, with butter, or roasted or mashed.
