Sow seed thinly in a pre-watered shallow row, lightly covered with a little soil. Keep soil moist, as dry conditions impair germination. Remember small sowings made every three weeks through the summer should ensure a continuous supply of delicious leaves. Allow 45cm between rows. Note that young plants are green and show little reddening which comes as plants mature.

Thin seedlings to about 25cm apart when large enough to handle. Ensure remaining seedlings are still firm in the soil.

Water plants generously in dry weather.

Soak leaves in warm water for 30 minutes before eating to dispel any slight bitterness. Early sowings can be more bitter; heat or drought stress can also cause this.
